Paderno hazelnuts are perfect for baking blank, i.e. without filling, in tarts, shortcrust pastries and other pastries.

• They are used both as a weight and as heat conductors to ensure even baking. They prevent the dough from swelling or creating air bubbles that prevent the cake from being properly filled.
• They are the hygienic and odourless alternative to beans, chickpeas and other legumes.
• They are spread on top of the dough once it has been rolled out in the baking tin. After cooking they can be reused for further preparations.
